Instructions
Peel the carrots and cut them into large pieces. Then put them in a food processor or chop them finely with a knife.
Whisk the eggs and season with salt and pepper.
Chop the mint.
Heat the olive oil in a pan, then sauté the carrots for 8 minutes. Season with salt and pepper to.
Pour the eggs over the carrots. Let them set slightly.
Using a spatula or spoon, push the edges of the omelette into the center several times.
Cover the pan and let the carrot omelette set for another 3 minutes.
Serve the omelette with the chopped mint and ham.
