Carrot Omelette

Ingredients
  

  • 1 cup carrots
  • 6 eggs
  • salt & pepper
  • 5 mint sprigs
  • ¼ cup olive oil
  • 2 oz ham sliced, optional

Instructions
 

  • Peel the carrots and cut them into large pieces. Then put them in a food processor or chop them finely with a knife.
  • Whisk the eggs and season with salt and pepper.
  • Chop the mint.
  • Heat the olive oil in a pan, then sauté the carrots for 8 minutes. Season with salt and pepper to.
  • Pour the eggs over the carrots. Let them set slightly.
  • Using a spatula or spoon, push the edges of the omelette into the center several times.
  • Cover the pan and let the carrot omelette set for another 3 minutes.
  • Serve the omelette with the chopped mint and ham.
