Instructions
Preheat the oven to 375°F.
Give the lemon a good wash, then zest and juice it.
In a bowl, whisk together the lemon zest, flour, baking powder, and salt.
Cream together the butter, sugar, and vanilla sugar until light and fluffy. Gradually incorporate the applesauce and lemon juice into the batter.
Add the dry ingredients and buttermilk to the wet ingredients. Mix until just combined.
Grease a baking sheet and spread the batter evenly onto it. Once ready, immediately bake for 25 minutes.
Notes
After baking, optionally prick the cake a few times with a fork and brush it with lemon juice mixed with a little sugar.
You can decorate the cooled cake with powdered sugar or icing.
