In a bowl, combine the yogurt, Skyr, mineral water, and beet.
Peel and mince the garlic. Wash the lemon under hot water, zest, and juice it. Wash and chop the dill.
Stir in the garlic, dill, lemon zest, and lemon juice into the yogurt mixture. Season with salt and pepper and chill in the refrigerator for at least 2 hours before enjoying.
