Have you ever eaten a lemon pizza? No? Then it’s high time! As unusual as the combination sounds, it is delicious. Try the recipe yourself and taste the magic for yourself!

Sweet Meets Salty With Our Lemon Pizza

Both pizza and lemons are welcome guests in Italian cuisine. So combining them was only a matter of time. Though it may not seem like it at first blush, our lemon pizza just makes sense. For this special recipe, you only need some thin lemon slices, a homemade lemon marinade that acts as a sauce, and of course mozzarella and Parmesan.

For making the pizza, we’ll leave it up to you whether you are rocking with a homemade or ready-made dough. We decided to use pre-made for our recipe, with lazier nights in mind. Once you have your dough, roll it out and set it on a piece of baking paper. Use lemon juice, zest, oil, and water with herbs and spice to make the sauce. Finally, top the pizza with mozzarella and lemon slices before baking. Finally, drizzle the lemon pizza with fresh lemon juice and sprinkle it with Parmesan, parsley and black pepper before serving.

This pizza is perfect for warm summer evenings when you want to keep it light and bright, baby. If you like, you can also prepare it with a pizza stone on the grill or in a special pizza oven. Buon appetito!

Ingredients
  

  • 1 pizza dough from the refrigerated section or homemade
  • 1 organic lemon
  • 1 ball (5.5 oz.) mozzarella
  • 1 tbsp lemon juice
  • 2 tbsp grated Parmesan
  • 1 tbsp fresh parsley
  • freshly ground black pepper optional
  • chili flakes optional

For the lemon sauce:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp water
  • 1 tbsp fresh parsley chopped
  • 1 small garlic clove grated
  • 1 tsp lemon zest grated
  • 1 tsp lemon juice
  • ¼ tsp fine salt
  • ¼ tsp black pepper

Instructions
 

  • Place the dough on a piece of parchment paper. Using your fingers, roll it out until the pizza is about 9 x 13 inches. Then carefully place the dough on a piece of parchment paper or a baking mat on your work surface.
  • Preheat the oven to 425°F.
  • Wash the lemon with hot water and zest it. Cut it in two, juice one half and slice the other.
  • Transfer all the ingredients for the sauce into a sealable container. Seal it and then shake vigorously until everything is well combined.
  • Using your fingers, making a few small indentations in the pizza dough. Now, spread the sauce evenly over the dough, making sure to fill the indentations with it.
  • Cut the mozzarella into ½-inch thick pieces. If it's very watery, pat it dry with a paper towel to remove excess moisture. Spread it evenly over the pizza.
  • Top the pizza with the lemon slices.
  • Set the pizza on a baking sheet and bake for 10-15 minutes.
  • Drizzle the freshly baked pizza with fresh lemon juice, then sprinkle the Parmesan and parsley on top. Optionally add some black pepper or a pinch of chili flakes before serving.
