Scones are the quintessential British treat, often served with traditional afternoon tea. Milder in flavor, they are especially delicious with jam and butter. But, what could make these beauties shine more than adding some delicate strawberries? We’ll show you how just how to bake strawberry buttermilk scones from just a few ingredients.

Our Simple Strawberry Buttermilk Scones

Making scones is easier than it looks: Its dough consists of flour, baking powder, sugar, buttermilk, egg, lemon zest, and cold butter. Start by mixing the flour, salt, baking powder, sugar, and lemon zest together, then add the cold butter. Knead all ingredients with your hands into a coarse dough. It’s okay if a few small pieces of butter remain in the dough.

Tip: The butter is what gives scones its signature texture. It should be as cold as possible when preparing the dough. It’s best to cut the butter into small pieces and place it in the freezer compartment of your refrigerator for 20 minutes before your start cooking.

Once the butter is incorporated into the dough, stir in the buttermilk and egg with a fork, and finally, gently fold in the chopped strawberries.

Now shape the dough into a rectangle on a floured work surface. Because the dough is quite crumbly, it’s best to do this with your hands. Then cut the dough with a knife into eight triangles that look like small slices of cake. Place them on a baking sheet, brush them with milk, and sprinkle a little brown sugar on top. Finally, bake your strawberry buttermilk scones in the oven for 30 minutes until golden brown.

Ingredients
  

  • ½ cup cold butter
  • 1 cup strawberries
  • 1 organic lemon
  • cups all-purpose flour
  • salt
  • 2 tsp baking powder
  • ¼ cup brown sugar
  • ¾ cup buttermilk
  • 1 egg
  • 2 tbsp milk
  • 2 tbsp brown sugar for sprinkling

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Cut the butter into small cubes and place in the freezer for 20 minutes before using.
  • Wash the strawberries, remove the stems, and quarter them. Wash the lemon and zest it.
  • In a bowl, combine the flour, salt, baking powder, sugar, and lemon zest. Add the cold butter and roughly knead everything together until a dough forms. Small pieces of butter should still be visible.
  • Whisk the buttermilk with the egg and stir the mixture into the dough with a fork. Finally, gently fold in the quartered strawberries, being careful not to crush them.
  • Place the dough on a floured work surface and shape it into a rectangle with your hands. Cut the dough into 8 equal-sized triangles with a knife.
  • Place the scones on a baking sheet. Brush them with milk and sprinkle with brown sugar.
  • Bake the scones for 30 minutes on the middle rack until golden brown.
