What if I told you that the classic sponge cake also tastes wonderful with other citrus fruits? The star of the show this time is the grapefruit. We admit it’s divisive. People tend to love it or hate it! We skew towards loving it, of course. Though we believe that this cake makes the case for why it’s good, and ultimately yummy, to enjoy the tart fruit! Our delicious grapefruit yogurt recipe is fruity-fresh, moist, and sweet. Ergo? Finally, the grapefruit is getting the recognition and use it deserves!
Our grapefruit yogurt cake is a sponge cake. It’s two main ingredients are, you guessed it, grapefruit and yogurt. While the yogurt makes the cake deliciously creamy and spongey, grapefruit juice and zest bring the flavor. The laidback is crowned with a glorious powdered sugar and grapefruit glaze. If you’re a real grapefruit truther, you can also decorate the cake with soe grapefruit slices.
If you’re not feeling a glaze, we firmly believe a cream cheese frosting or cinnamon-sugar dusitng would work very nicely. While the former would provide a nice tangy balance, the latter would have almost a caramelized effect. Win-win-win it would seem!

Grapefruit-Yogurt Cake

- 1 (9×5 in.) loaf pan (available online)
Ingredients
- butter for greasing the pan
- 2 organic grapefruits zested and juiced
- ½ cup butter softened
- ½ cup sugar
- ½ tsp vanilla extract
- 2 eggs
- ⅔ cup Greek yogurt
- 1 cup all-purpose flour
- 1⅛ cups ground almonds
- 2 tsp baking powder
- 1 pinch of salt
- 1 cup powdered sugar
- red food coloring (optional)
Instructions
- Preheat the oven to 350°F. Grease a 9×5 inch loaf pan with butter.
- Wash the grapefruits with hot water, zest one grapefruit and juice both. Set the zest and juice aside separately.
- In a large bowl, cream together the softened butter, sugar, and vanilla extract until fluffy.
- Add the eggs one at a time, mixing well after each addition, until smooth.
- Stir in the Greek yogurt, grapefruit zest, and half of the grapefruit juice.
- In a separate bowl, whisk together the flour, ground almonds, baking powder, and salt. Gently fold the dry ingredients into the wet ingredients.
- Pour the batter into the greased loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it onto a wire rack to cool completely.
- Whisk together the powdered sugar with 3-4 tablespoons of grapefruit juice until a smooth, thick glaze forms. If you'd so like, add a touch of red food coloring for a pink hue.
- Spread the glaze over the cooled cake and let it set before slicing and serving.
